As soon as he arrived in Nozay in 1973, Bernard Bourseau imagined the mill of his childhood, a mill with stone wheels.
A PASSION STORY
Passionate, responsible, visionary, Bernard Bourseau has managed to reconcile authenticity and modernity and to pass on to his sons, Franck and Christophe, a working tool that today allows them to differentiate themselves.
Since the 1980s, he has been working long and hard to find original equipment and renovate to restore this authentic millstone. 20 years of passion, work and perseverance will be needed: the mill will crush these first wheat grains in 1999.
A UNIQUE AND AUTHENTIC MILL
Unique because it did not exist and he had to imagine everything.
Authentic because although some compromises had to be made to allow the mill to operate, Bernard Bourseau has taken care to preserve the fundamentals of grinding on millstones that guarantee exceptional flours.
The millstones are made of natural fresh water quartz stone from Ferté Sous Jouarre: the world capital of grinding stone until the 19th century thanks to the hardness and exceptional quality of the stone extracted in its quarries, which supplied mills all over the world.
The flour is transported by wooden bucket elevators to keep all the aromas of the flours.

Bernard Bourseau was right to believe in it: he would be proud to know that his mill is authorized to produce the tradition “Farine de mon Père” Label Rouge type 80 millstone flour.
In 2016, Franck and Christophe took it to heart to safeguard this heritage and restore it to its original beauty, while preserving the deep nature of this mill, inhabited by their father, a man of heart. On this land he chose more than 40 years ago, his imprint can finally adorn the pediment of his mill.
